According to the Institute of Agrarian Economics, the average Ukrainian family will spend approximately UAH 969.74 on a Christmas table of 12 traditional dishes for a festive dinner. These calculations are based on average prices in Ukrainian supermarkets as of mid-December 2023.

The most important components of the Christmas table are kutia and uzvar, fried fish, vinaigrette, dumplings (with potatoes, with cabbage, with cherries), stewed cabbage, lean borscht with beans, fried potatoes, fresh and salted vegetables. The cost of these dishes for an average family is about UAH 969.74.

Among the most expensive ingredients in this year's kutia are poppy seeds (UAH 43 per 200 g), peeled walnuts (UAH 24 per 100 g), and raisins (UAH 17.50 per 100 g). According to the researchers, wheat kutia will cost 103.71 UAH, where the main ingredient, durum wheat groats (400 g), can be purchased for 9.60 UAH. Additional ingredients such as honey (UAH 8 per 100 g) and sugar (UAH 1.61 per 50 g) are also included in the calculations.

Traditional uzvar is made from dried apples, pears, and prunes and costs 66 UAH for a ready-made set of fruit (600 g per 2 liters of water). Among other dishes, fried fish was the most expensive, costing 336.69 UAH.

The second most expensive dish is lean borsch with beans, which includes a variety of ingredients such as white dry beans (42.75 UAH per 300 g), potatoes, cabbage, onions, carrots and beets. The total cost of the borscht is 82.83 UAH.

The Vinaigrette salad (34.19 UAH for 1.58 kg of products) includes barrel pickles (14 UAH for 200 g), potatoes, beets, carrots, vegetable oil, salt and pepper. The most expensive ingredient was the pickle, but overall, the cost of the salad remains within the range of affordability for a holiday table.
