Preserving table beets until spring, while maintaining their freshness and juiciness, is possible using several simple but effective methods. Proper storage conditions allow not only to extend the shelf life of root vegetables, but also to avoid their spoilage. Here are some proven tips on how to ensure optimal conditions for long-term storage of beets.
The ideal temperature for storing beets is from 2 to 5°C. This is important so that the root vegetables do not lose their juiciness and do not spoil. Two main places are suitable for such conditions:
1. A cellar or basement with good ventilation are optimal places for long-term storage, where the temperature remains stable within 2–5°C.
2. Refrigerator - for storing small amounts of beets, you can use a refrigerator if there are no other options.
For storage in the cellar, you can take a few additional measures:
- Container: It is best to use an aluminum container or a special container for storing beets. This will keep the roots in good condition.
- Sand: A layer of sand about 2 cm thick should be poured onto the bottom of the container. The sand helps maintain the necessary humidity and at the same time protects the beets from rotting.
- Protection: For additional protection of the beets from mold and pests, you can cover them with juniper branches or use cardboard.
If you plan to store the beets in the refrigerator, here are some tips:
- Paper towel: Each beet should be wrapped in a paper towel. This will allow the paper to absorb excess moisture, which will prevent the roots from rotting.
- Plastic bag: The wrapped beets can be placed in a plastic bag, but with several holes for air circulation. This will help prevent moisture from accumulating inside the bag, which can contribute to mold.
Using these methods, you can preserve beets until spring without losing their taste and beneficial properties.
